Red Lentil Dhal

Serves: 4
Ingredients:
- 200g red split lentils
- 850ml water
- 1tsp salt
- 2 tbsp olive oil
- 1/2 tsp mustard seeds
- 1/2 tsp cumin seeds
- 2 finely chopped medium onions
- 2 finely chopped green chillies
- 1 tsp turmeric
- 1 tsp cumin
- 1/2 tin chopped tomatoes
- 1 whole chopped tomato
- 2-3 tbsp coriander leaves
Directions:
(1) Wash lentils and add to medium saucepan. Add water and bring to boil. Reduce heat to medium
and skim off foam. Cook uncovered for 10mins. Reduce heat to low, cover and cook for 45mins.
Stir occasionally to avoid lentils sticking to pan. Stir in the salt.
(2) Meanwhile in another pan, heat oil over medium heat. Add seeds, onions, and chillies and cook
for 3mins.
(3) Next add turmeric & cumin, tomatoes and stir for 30seconds.
(4) To finish, fold onion mixture into the cooked lentils. Stir in the coriander leaves, remove fromheat, and serve immediately.
(5) Serve on a plate with basmati rice.
