Prawn Fried Rice

Serves: 3-4
Ingredients:
- 1 tbsp olive oil
- 1 tsp garlic
- 1 green capsicum chopped
- 2 carrots chopped
- 500g prawn cutlets
- 500g cooked jasmine rice (let rice cool after cooking to remove moisture)
- 150g frozen peas
- 2 tbs soy sauce
- 2 tsp sesame oil
- 1 large egg
- spring onion chopped
- sesame seeds (optional)
Directions:
(1) Cook rice (165g uncooked) following packet instructions.
(2) Heat the oil in a large non-stick frying pan or wok over a medium heat then add garlic and fry
for a minute.
(3) Add chopped capsicum and carrots. Fry for 2-3 minutes.
(4) Add prawn cutlets and cook for 4 minutes.
(5) Stir in cooked rice, frozen peas, soy sauce, and sesame oil. Fry mixture for 1-2 minutes and
push to one side of the pan.
(6) Add egg to the empty side of the pan and stir to scramble. Once cooked mix everything
together.
(7) Dish up and garnish with spring onion and sesame seeds (optional).
